We are a young group, so this page sets out what we are committing to rather than what we have already achieved.

Our position
Adaptive reuse is the whole business model.
Our entire portfolio is old buildings brought back into use. That is not a sustainability initiative bolted onto the side of what we do — it is the thing we do.
Retaining a century-old hotel avoids the embodied carbon of demolition and new construction, keeps a landmark in service, and holds a main street together. Where we intervene, we aim to do it once and do it properly.
Four commitments
Restore, don’t rebuild
Every hotel in our portfolio is an existing building. The greenest pub is the one already standing — we retain the structure, the joinery and the character, and replace only what has failed.
Source close to the door
Kitchens are built around growers, bakers, brewers and fishers within reach of the venue. Shorter supply chains, less freight, and money that stays in the town.
Employ from the neighbourhood
We hire and train locally, and we pay properly. Hospitality careers should be viable in regional towns, not just capital cities.
Measure before we market
We would rather publish numbers late than claim results we cannot evidence. Targets and reporting arrive with our first trading year.

What this looks like day to day.
Specifics rather than sentiment. These are the standards we build into new venue fitouts and operating procedures.
The building
- Adaptive reuse of heritage fabric rather than demolition
- LED relamping and zoned controls through back-of-house
- Water-efficient fixtures specified in every room refit
- Original timber, brick and tile retained and repaired where sound
The kitchen & bar
- Menus written around seasonal and regional produce
- Whole-animal butchery to reduce trim waste
- Organics separated for collection or local compost
- Draught-first beverage program to cut packaging
The rooms
- Linen changed on request for stays over one night
- Refillable amenities instead of single-use miniatures
- Bulk-refill drinking water rather than bottled
- Repairable furniture and locally made fitouts where possible
The community
- Function space offered to local groups at cost
- Market and maker programming in venue grounds
- Local musicians paid, not booked for exposure
- Working with Traditional Owners on Country acknowledgement
What we are not claiming
No badges we haven’t earned.
We hold no certification, we are not carbon neutral, and we are not going to imply otherwise. Sustainability reporting requires trading data, and our first properties are still coming online.
Once venues are operating, we will publish energy, waste and local-spend figures alongside the targets we set against them — including the ones we miss. If you are assessing us as a supplier or partner and need detail before then, ask and we will share what we actually have.
